This weekend was packed full of prep, cleaning, eating and repeat. We catered a party for 50 people for an in-home concert. We learned a lot and gave it our all. Our sweet friend, Abigail helped us serve on the day of the event. We could not have done it without her. She glided effortlessly among the guests and was a huge asset to the day’s success. Eli and I feel so appreciative for the friendships we have made here in Charlotte. For the food we made homemade pickles to go on the BBQ pork sliders. They were delicious and we are excited about our future pickling endeavours.
Here was the menu for the night:
Glorified Sweet Potato Wedges + Banana Sour Cream, Bacon Bits & Chives
Spicy Ricotta, Prosciutto and Fig Crostini
BBQ Pork Sandwiches w// Homemade Apple Coleslaw and Pickles
Creamy Avocado Hummus
Seafood Dip in a Bread Bowl
Vegetable Chips w// Creamy Cilantro Lime Dip
Iced Cut-Out Cookies
The recipe for these cream puffs came from our family friend, Mrs. Frank. So Mrs. Frank, if you’re reading this, we cannot thank you enough! Everywhere we take your treats, people are amazed by them. One woman last night exclaimed, “Now that is how a cream puff should taste!” …who would have thought that your cream puffs would make it all the way down here and be such a hit? They are perfect. The shell has a nice crisp edge and the thick, lightly sweet and whippy vanilla cream is to die for. 50 people were just delighted by it yesterday!
